為迎接炎炎夏日,波士廳·101的點心大廚特別創作全新系列的特式點心,讓各位食客有耳目一新之感,先讓我們看看當中的三款 ~

鮮茄金菇餃:豔紅的外型是以鮮茄汁去製作,加入鮮茄肉及金菇做餡,爽口清新。

回味涼瓜餃:涼瓜大家吃得多,以涼瓜做餡料的餃子大家或者未吃過。味道甘香涼快,絕對是夏日清爽佳品。

長今餃子:加入脆底外型特別,餡料是加入了泡菜。口感爽脆而味道鮮濃,正好喚醒大家在炎夏沉睡了的味蕾。

According to the Observatory’s report, the temperature drops to 10 degrees Celsius. The Cold Weather Warning is now in force for the next couples of days. It’s now the best time to enjoy the Snake Soup and stay warm.

新菜式陸續出台,大廚良哥以鱈魚及三文魚泡製出這一道「兩極鴛鴦魚卷」。先將魚肉切片再釀以蘆筍,再煎香並以椀豆打成的醬汁襯托。兩種魚肉各具口感,但同樣鮮香味美。

龍蝦小丸子

乍暖還寒的日子提醒大家春天已來到,也正是時候推出一系列的春季新菜式。大廚良哥將龍蝦肉及龍蝦汁釀入龍蝦丸之中,再用上蒸及炸的兩種做法。蒸龍蝦丸令龍蝦肉的鮮味得以完全保留,而炸的就更添惹味香口。要提醒大家在吃此味龍蝦丸的時候記緊小心,一不留神就給龍蝦汁「爆」中。

龍蝦小丸子包括蒸的或炸的龍蝦丸半打,每客$280/半打。因製作需時,有興趣的朋友敬請致電3955 1755預訂菜式。


Steamed and Deep-Fried Lobster Balls
It is Spring and is time to launch a series of new dishes for the season. The idea of making the lobster balls is a variation of the local beef balls stuffed with soup and juice. The lobster balls are stuffed with sauce made with lobsters. While the Steamed Lobster Balls are so juicy, the Deep-Fried Lobster Balls are savoury and tasty. Be careful of the hot sauce inside, when you eat them.

Every dish contains half dozen (6 pcs) of steamed or deep-fried lobster balls. ($280/6pcs) Please order in advance while making reservation at 3955 1755.

繼瀨尿蝦沙律卷之後,大廚良哥再下一城的推出富貴蝦尾餃。同樣以新鮮生猛的瀨尿蝦作主要食材,但就以蝦餃形式去製作。粉紅色的餃皮是加入紅菜頭汁去製作的效果。配合瀨尿蝦尾逐位上檯,賣相獨特之餘也具威勢。

After inventing the Salad Roll with Mantis Shrimp, Head Chef has created a new dimsum, Steamed Dumpling with Mantis Shrimp($138 per piece).
With fresh mantis shrimp, the new dimsum has similar presentation as shrimp dumpling, but with a giant tail of the mantis shrimp. Mantis shrimp also has the symbolic meaning of "Wealth" in Chinese. Adding beetroot juicy to the dough of the shrimp dumpling made it look much festive and creative.

You may have tried different version of Stuffed Duck, but you have to try the Boss' Stuffed Duck with Eight Treasures. After deboning the duck, chef uses 10 ingredients, including lotus seed, ginkgo and preserved ham, to stuff it and serve it with flavourable abalone sauce to preserve the taste.

恭喜波士廳·憑一味「瓊姿玉露迎合莆」勇奪2016年美食之最大賞「蛋組」的金獎。

這一道設計得美侖美奐的菜式,一邊是以蒸水蛋的方式,混和了龍蝦、西蘭花及蟹肉去做成三層的賣相。再以海鮮湯打成的泡沬,增強觀感及味道上的效果。另一邊就是鹹蛋酥釀白鴿蛋做成外脆內嫩的口感,一點點的煙薰香及墊以甜鹹蛋汁更增添風味。

Big congrats Sky Boss winning the gold award in egg category at "2016 Best of the Best Culinary Award" with dish 'Steamed Egg White with Crab, Lobster, Broccoli, Seafood Bouillon & Egg Sauce and Deep-fried Salted Egg Pastry Stuffed with Pigeon Egg'.

It is a beautiful combination of 3-layers steamed egg mixing separately with lobster, broccoli and crab meat on one side; crispy and smoky salted egg pastry stuffed with soft pigeon egg on the other side.

Deep-Fried Chicken with Homemade Shrimp Sauce is definitely one of the signature dishes at the Sky Boss. Chicken has been marinated with shrimp sauce from Tai O, and deep-fried to the perfect crispness but also remained the softness. So tasty that you would love to have another bite!

長腳蟹三吃米芝蓮豪華長腳蟹宴

原來潮潮濕濕的黃梅天,正是居於水域的長腳蟹當造時期。「不時不吃」是我們米芝蓮星級飲食名所的宗旨,因此適時推出「阿拉斯加長腳蟹三吃」,以一種食材,烹調出三種截然不同的風味。不過今時今日要買到長腳蟹並非易事,所以「波士廳」搜羅了最好的長腳蟹供大長腳蟹,又名皇帝蟹。我們的「長腳蟹三吃」以新鮮生猛長腳蟹炮製,保存肉汁和海洋西廚經常只會以一種方式烹調長腳蟹的腳,做法單調;我們則以一隻長腳蟹幻化成三碟家品嚐。鮮味,令肉質維持細嫩。菜餚,絕不浪費任何部分,滿足一眾「得一想三」的老饗。

 

避風塘辣炒蟹腳

廣東經典名菜「避風塘炒蟹」經由我們以長腳蟹演繹,別具新意及氣派。將蟹鉗、蟹腳拆出後,加入乾辣椒、蒜蓉、豉油和薑葱一同炒起,簡單做法反而更凸顯出生猛長腳蟹的新鮮。當肉身肥厚的阿拉斯加長腳蟹遇上惹味的避風塘配料時,那種啖啖肉的香辣刺激感實在令人再三回味,一般螃蟹完全無法比擬。

雞油花雕蒸蟹身
大廚會將蟹身和蛋漿同蒸,讓蛋漿盡情吸收長腳蟹肉汁的鮮味。只得蟹肉和蛋漿略嫌孤寡,所以大廚亦會加入雞油和少量花雕:雞油的油脂香氣可以豐富味覺層次,而花雕則有提鮮作用,令蟹肉的鮮味更上一層樓。製作這味菜餚時大廚會謹慎地控制火候,確保蛋漿不會過熟,建議
品嚐時先將蟹肉輕輕醮點蛋漿,又或者以蛋漿拌飯享用。

蟹蓋芝士焗飯
最後輪到整隻蟹最精彩的部分 - 蟹蓋。大廚首先將熱辣辣的炒飯釀進蟹蓋,吸收蟹膏甘香的味道,再將芝士、忌廉、白酒等配料製作的餡料淋在炒飯之上,並灑上少許黑松露,然後放入預熱焗爐內焗製而成。這味香濃的「蟹蓋芝士焗飯」混合中式炒飯和意大利飯的風味,別具特色;而蟹膏、芝士和黑松露的濃香味道亦堪稱絕配。
